In order to ensure the optimum maturity of each coffee variety, Ipanema is a huge employer of the local area (the farm is absolutely huge!). It has been producing Brazilian Ipanema Reserve Coffee since the 1970s. Careful studies of the different soil and climate characteristics of each farm are conducted, as part of their differentiation strategy. These endeavours help ensure the optimum maturity of each coffee variety.
There are many factors that help influence and determine the wide range of cup profiles from over 200 different terroirs.
Ipanema Reserve coffee trees blossom two or three times per crop due to the influx of rains in southern Minas Gerais. This leads to different stages of bean maturation throughout the harvesting season.
The Ipanema Reserve coffee is harvested at the ideal maturation stage due in no small part to the farmers focus. This strategy ensures the best cup profiles.
